It’s spectacular. Cajun’s Snack Bar in Lowell VT is the best place for fried bayou snacks north of the Louisiana state line.

Man I do miss the food from my business trips to Louisiana, even the snack bar at the Lafayette airport did a passable catfish poboy. I gotta look to see if there’s a Cajun joint in the city, there surely
must be since we have
everything else...

T hat is about the most stuffed po-boy I’ve seen - didn’t skimp on that crawfish! We did take out from our little Lebanese place tonight, so now I reek of garlic.

We have a fairly healthy local population actually, though the ones up here are pretty small. This place uses farm raised southern species.

I recommend both. Crawfish are subtly different from shrimp. As fresh water animals they have less of the seafood flavor, but are a little stronger flavored than shrimp. Almost a little like crab. And, I mean a poboy is a large french bread sausage bun(u sually toasted and buttered) stuffed full of fried fish or shellfish (or chicken or roast beef) with some lettuce (some people like tomato too) and spicy aioli... How can you go wrong with that?

We used to catch them in the creeks in Oklahoma. I’m pretty sure they’re a different species from the Louisiana farm-raised variety.
Does that place include some Louisiana hot sauce with their sandwiches ?

Of you ask... They're operating as takeout only right now, normally they have bottles of the stuff on every table and at the condiment bar.
